Made this last night and was quite nice! I just didnt add the potatoes, as I am not eating carbs at night.

Chicken and Herb Stew

Serves 1

Ingredients:

100g chicken breasts, skinless, deboned and cubed
75g sliced carrots
50g sliced mushrooms
500ml water
5ml chicken stock powder
75g baby potatoes, halved with skin
75g green peas
Herb blend for chicken
5ml cornflour

Method:

Heat a saucepan over medium-high heat and spray pan with non stick cooking spray.
Add cubed chicken and brown lightly.
Add carrots and mushrooms and lightly fry for 2 min.
Add water, chicken stock and potatoes; bring to the boil and reduce to a simmer for 25 – 30 min until potatoes are cooked.
Add peas and herb blend.
Mix cornflour with a little cold water to make a paste, stir into the stew and allow to thicken

Lemon and Rosemary Baked Hake

Serves 1

Ingredients:

150g Hake
10ml Olive Oil
150g Cooked Basmarti Rice
150g Gemsquash with Cinnamon
100g Tomato & Lettuce Salad
1 lemon, quartered
1 sprig of Rosemary (I couldn’t find a sprig, so just used dried rosemary)
Black Pepper to season

Method:

Preheat oven to 180 degrees
Brush hake with olive oil and season with black pepper
Squeeze lemons into a small jug and infuse with rosemary leaves
Placed the already squeezed lemon segments in the centre of the baking tray and place the hake on top of the lemon wedges.
Brush the lemon juice and rosemary over the hake and bake for 25min, basting regularly, until the hake is cooked through
Serve with basmati rice, gemsquash and mixed salad
