Minestrone soup - EASY

Wanted to share this deeelicious recipe, so quick and easy to make!

I buy the Minetrsone ready chopped soup packets from Woolies!

1 x packet bacon
1 x chopped Onion
2 tsp garlic
1 x tin chopped tomatoes
2 x Chicken stock cubes / Ina Paarmans chicken stock
2 x packets Minestrone chopped veggie mix from Woolies (I take out the onions they are in HUGE chunks)
2 x beeg handfuls of soup pasta (the rice shaped ones or whatever you like)
to serve: Parmesan cheese and olive oil

Fry Onions, Bacon and garlic till done
Add tomatoes, veggie mix, chicken stock and season with salt and black ground pepper
Pressure cook for 20 minutes
Add you pasta and boil till cooked, Taste for seasoning

Serve with Parmesan cheese and olive oil drizzled on top.

VERY YUMMY! and makes a full pot!

Sounds almost like what I made for supper last night just no pasta (as I cut out wheat during the week adn I used chicken instead of bacon).

so yummy! adn left overs for lunch today
