Biltong Pate & Baked camembert

Post by Zellie on Tue 6 Jul 2010 - 12:16

I love pates for a snack before a braai etc. instead of the normal chips Smiley

Ingredients

* 100g biltong, grated finely
* 100g cream cheese
* 50ml double cream
* 2 tbsp Worcestershire sauce
* 1/4 tsp ground coriander
* melba toast or brown bread, to serve

Method
Cream together all ingredients until smooth. The pate will be fairly loose, so spoon into ramekins and put in the fridge for 1 hour before serving with melba toast or triangles of fresh bread

Baked camembert

Ingredients

* 1 box camembert
* 2-3 thyme, leaves only
* 1 tbsp olive oil
* ciabatta or crackers, to serve

Method
1. Preheat the oven to 180 degrees celcius

2. Unwrap the cheese and carefully slice the rind off the top of the cheese.

3. Season the camembert with sea salt and freshly ground pepper. Sprinkle over the thyme leaves and drizzle with olive oil.

4. Bake for 10-15 minutes, until the cheese is browned on top and melted inside. Allow to cool slightly, then serve with bread such as ciabatta
